Summertime eating
It's Recipe Wednesday and we are happy and thankful you stopped by! Are you hungry?!
Although here where we live in California it is not quite summer yet, with the warm temperatures we have had recently, you could not tell the difference.
Heating up the house for meals is the last thing we want to do, so we have been planning some cool, get ready for the heat recipes.
Today we would like to share with you, and inspire you with our Cold Bean Salad in a Jar recipe.
Cold Bean Salad Recipe
1 can black beans drained
1 can garbanzo beans drained
1 can cannelli beans or white kidney beans drained
1 can corn drained
Baby bell peppers 1 each : red, yellow, orange
1/2 sweet onion chopped
Cilantro as much as you like chopped
3 cloves garlic pressed or minced
Italian dressing to wet the salad to taste or use olive oil and balsamic vinegar to taste
Salt and pepper to taste
In a large bowl place all ingredients. Toss together. If using jars to serve salad in, fill jars and chill in refrigerator several hours. Store left overs covered in refrigerator. This tastes best ice cold.
You will need mason jars, string, napkins and forks.
Fill the mason jar with the bean salad.
Isn't it pretty?!! Looks like summertime!
Once the jar is filled put the lid on the jar.
Take your napkin, we used paper but cloth would work fine too, and fold it into a narrow rectangle that will fit around the jar.
Cut off a length of string, and tie the napkin around the jar with the string.
Stick your fork in between the jar and napkin on the side.
Place jarred salad in the refrigerator to chill.
Before eating, turn the jar upside down a couple of times to distribute the dressing.
These make great little picnic basket salad jars. Try some grilled tortillas on the side, or put your cold bean salad in the tortilla like a wrap. Add in some rice and you have a complete protein meal.
